A healthy treat for my children's lunch tomorrow: a sausage tart. I am not kidding!! They'll be very excited about it, yet it's full of hidden goodness: the custard contains spinach, as you can see but also small cubes of potato and parsnip. A little roquefort to enhance the taste and boost their immune system with friendly bacteria. The little veal sausages are low in fat and, like the spinach, a good source of iron (a side salad and fruit with vitamin C will help process this), and with a few slices of this tart, they will eat a lot more vegetables than meets the eye. Did I mention that the pastry is made with whole wheat flour?
